Tambo del Inka has an organic garden that supplies both its restaurants as well as that of the Palacio del Inka. Currently, the garden grows raspberries, baby string beans, Creole rocket, black mint, fennel, cherry tomatoes, lettuce, yellow flower rocket and various edible flowers. Similarly Libertador Arequipa also cultivates and harvests its own products such as Andean potatos, tomatoes, green onions, celery, and a number of other products, creating the concept “From our garden to your table,” in their restaurant.

In Chalana, the fish served is bought fresh from local fishermen and many of the dishes are cold, requiring no electricity or fuel for their preparation.
